    There are some Pakistani dishes that do not need an elaborate introduction. Qeema is one of them. Fragrant, spicy and deeply savoury, this minced-meat classic can turn a handful of everyday ingredients into the kind of meal people remember.

    The secret is not an oversized spice list. It is technique. Properly browned onions, patiently cooked tomatoes and a good bhunai give the meat its character, while fresh green chilies and coriander brighten the finished dish.

    This version is designed for a home kitchen: straightforward enough for a weeknight, yet carefully balanced for the depth expected from a traditional Pakistani minced meat curry.

    What Makes Good Qeema Different?

    The texture matters as much as the seasoning. Choose medium-ground beef or mutton rather than an extremely fine mince. A little natural fat is useful because it carries the spices and keeps the meat succulent.

    The other important stage is bhunai. Once the mince goes into the pan, it releases moisture. Resist the temptation to add lots of water immediately. Let that liquid cook away, then allow the meat to fry briefly with the masala. That transition from steaming to frying is where the flavour becomes noticeably richer.

    Ingredients

    • 500 g medium-ground beef or mutton
    • 3 tbsp cooking oil
    • 1 large onion, finely chopped
    • 2 medium tomatoes, finely diced
    • 1½ tbsp fresh ginger-garlic paste
    • 1 tsp cumin seeds
    • 1½ tsp ground coriander
    • 1 tsp red chili powder
    • ½ tsp turmeric
    • ½ tsp garam masala
    • ½ tsp freshly ground black pepper
    • 1 tsp salt, or according to taste
    • 3 green chilies, sliced
    • ½ cup fresh coriander, chopped
    • ¼ cup water, only if needed
    • 1 tsp lemon juice

    How to Make Pakistani Qeema

    1. Start with the onion

    Heat the oil in a wide karahi or heavy-bottomed frying pan. Add the cumin seeds and let them sizzle for a few seconds. Add the chopped onion and cook over medium heat until golden.

    Do not rush this stage. Pale, barely cooked onion produces a very different result from properly caramelized onion.

    2. Build the masala

    Add ginger-garlic paste and cook for about a minute, stirring constantly. Follow with coriander, chili powder, turmeric and black pepper.

    Add the tomatoes and cook until they soften completely. Keep stirring until the mixture thickens and the oil begins to show around the edges. This is your masala base.

    3. Add the mince

    Increase the heat and add the qeema. Immediately break apart any large clumps with a wooden spoon.

    Cook uncovered for several minutes, stirring frequently. The mince will release moisture; continue cooking until most of it evaporates. Now reduce the heat slightly and continue bhunai until the meat looks glossy and well coated rather than watery.

    4. Let it finish gently

    Add a small splash of water if you prefer a little gravy. Cover the pan and simmer for approximately 8–10 minutes, allowing the flavours to settle into the meat.

    Remove the lid and check the consistency. For a dry-style qeema, cook uncovered for another few minutes. For a softer curry, leave a little masala sauce in the pan.

    5. Add the finishing touches

    Stir in the green chilies, garam masala, lemon juice and most of the fresh coriander. Give everything a final minute over low heat, then turn off the stove.

    Scatter the remaining coriander over the top before serving.

    What to Serve With Qeema

    This dish is wonderfully flexible. For a classic Pakistani meal, serve it with roti, chapati, naan or paratha. Plain basmati rice also works when you want something lighter.

    A bowl of cooling raita, sliced onions and fresh lemon makes an excellent contrast to the warm spices.

    Chef’s Tips for Better Results

    Use a wide pan rather than a narrow pot. More surface area allows excess moisture to escape quickly.

    Avoid drowning the mince in water. Qeema should have concentrated flavour, not a thin broth.

    Fresh ginger, garlic, coriander and green chilies make a noticeable difference. They provide the fresh top notes that powdered seasoning cannot fully reproduce.

    Finally, taste before serving. Salt, chili strength and tomato acidity vary, so the best qeema is adjusted at the end rather than blindly following a fixed measurement.

    Final Word

    A good authentic Pakistani qeema recipe is less about complicated cooking and more about respecting each stage. Brown the onion properly, cook the tomato masala down, give the mince enough time to fry, and finish with fresh ingredients.

    That is what transforms ordinary ground meat into a deeply satisfying Pakistani dinner.
