The Chicken Fatayer I Keep Coming Back To
There is something so satisfying about making these chicken fatayer from scratch.
I start with a soft, slightly sweet dough, prepare a fragrant chicken filling, and then sit down to shape each little pie. The kitchen already smells wonderful before they even reach the oven.
What I love most is the texture. The outside turns beautifully golden while the dough stays soft and fluffy inside. Then comes the filling: tender shredded chicken, sweet onion, capsicum, creamy cheese, feta, herbs and warm Middle Eastern spices.
I usually make these when I want something special for breakfast or afternoon tea. They also disappear quickly at family gatherings, so I often prepare an extra batch.
This recipe makes 12 generous fatayer.
Ingredients for the Soft Dough
- 4 cups all-purpose flour (500g)
- 1 tablespoon instant yeast (10g)
- 2 tablespoons sugar (25g)
- 1½ teaspoons salt (8g)
- ½ cup plain yogurt (120g)
- ¼ cup vegetable oil (60g)
- 1 cup plus 2 tablespoons warm milk (280ml)
For the Creamy Chicken Filling
- 4 cups cooked shredded chicken (500g)
- 1 large onion, finely chopped (150g)
- ½ cup finely chopped green capsicum (50–75g)
- 2 tablespoons oil (30g)
- 1 teaspoon salt (6g)
- 1 teaspoon black pepper (2g)
- 1 teaspoon paprika (2g)
- ½ teaspoon cumin (1g)
- 1 teaspoon coriander powder (2g)
- 1 teaspoon chili flakes (2g)
- 1 tablespoon sumac (7g)
- 1 tablespoon lemon juice (15g)
- 2 tablespoons fresh parsley, chopped (8g)
- 4 tablespoons cream cheese (60g)
- ⅓ cup crumbled feta cheese (40–50g)
For the Topping
- 1 egg
- 1 tablespoon milk
- 1½ tablespoons sesame seeds
How I Make the Dough
I begin by mixing the flour, yeast, sugar and salt in a large bowl.
Next, I add the yogurt, vegetable oil and warm milk. I mix everything until it comes together into a soft dough.
This is the part where I slow down and enjoy the process. I knead the dough for about 10–12 minutes until it feels smooth and elastic.
I place it in a lightly greased bowl, cover it and leave it somewhere warm for around 1 to 1½ hours. When it has doubled in size, I know it is ready.
My Juicy Chicken Filling
While the dough is rising, I prepare the filling.
I heat the oil in a pan and gently cook the onion until soft. Then I add the green capsicum and let it cook for another minute.
The shredded chicken goes in next.
I season it with salt, black pepper, paprika, cumin, coriander, chili flakes and sumac. A splash of lemon juice brightens everything up.
I cook the mixture for just 2–3 minutes. I don’t want to dry out the chicken.
Then I add the cream cheese and stir until it melts into the mixture.
Once I take the pan off the heat, I let the filling cool completely. Finally, I fold in the crumbled feta and fresh parsley.
That creamy, slightly tangy filling is one of my favorite parts of this recipe.
Shaping the Fatayer
Once the dough has risen, I divide it into 12 equal portions.
I roll each piece into a small circle and place about two tablespoons of filling in the center.
Then I bring the edges together and pinch them firmly into a triangle.
I arrange each one on a lined baking tray, leaving a little space between them.
Now comes the second rise. I cover the tray loosely and let the shaped pastries rest for 25–30 minutes.
This short resting period helps give the finished fatayer that soft bakery-style texture I love.
Baking Until Golden
I whisk together the egg and milk and brush the tops gently.
A sprinkle of sesame seeds gives them a beautiful finish.
I bake the fatayer in a preheated oven at 200°C (400°F) for 15–18 minutes, or until the tops become golden brown.
As soon as they come out, I like to brush them very lightly with melted butter or olive oil.
A little fresh parsley on top makes them look even more tempting.
And honestly, this is the moment when I always want to grab one immediately.
What I Serve With Chicken Fatayer
These homemade chicken pies are delicious on their own, but I especially enjoy them with:
- Garlic mayo dip
- Sweet chili ketchup sauce
- Mint lemonade
- Fresh cucumber and tomato salad
- Plain yogurt with herbs
They work beautifully for breakfast, lunchboxes, afternoon tea, picnics and casual gatherings.
My Tips for Soft, Juicy Fatayer
Don’t add hot filling to the dough. Let the chicken mixture cool completely before shaping.
Don’t overfill the pastries. Too much filling can make sealing difficult and may cause the edges to open during baking.
Keep the dough soft. Adding too much flour can make the finished fatayer heavy.
Watch the oven. Baking times vary between ovens, so look for a rich golden surface rather than relying only on the clock.
Don’t skip the second proof. That short rest helps create a lighter, softer pastry.
Nutrition Information
Nutrition will vary depending on the chicken, cheeses, oil and portion size used. As a rough estimate, one fatayer may provide around 330–380 calories, with approximately 18–22g protein, 35–40g carbohydrates and 12–16g fat.
The chicken provides protein, while yogurt and cheese contribute calcium and additional protein. For a lighter version, I can reduce the amount of cream cheese, feta or oil.

Why I Love This Recipe
For me, these fatayer are more than just another chicken recipe.
I enjoy the whole process: kneading the dough, seasoning the filling, shaping the little triangles and watching them turn golden in the oven.
The best part comes when I break one open while it is still warm. The bread is soft, the chicken is flavorful and the creamy cheese filling makes every bite feel comforting.
If you enjoy homemade bakery-style recipes, this is one I would happily make again and again.
