Golden, puffed pastries with a savory potato filling make a delicious homemade snack without complicated ingredients. These kefir potato puffs combine a simple dough made with kefir, egg, and flour with creamy mashed potatoes, sweet fried onions, and fresh dill. The pastries develop a beautifully browned exterior when fried, while the filling stays soft and flavorful.

This recipe is a practical choice for breakfast, an afternoon snack, or a side dish served with soup. If you enjoy homemade savory pastries, this potato-filled version is worth adding to your regular cooking routine.

Why You’ll Love These Kefir Potato Pastries

The dough uses kefir, a fermented milk drink with a consistency similar to thin yogurt or buttermilk. Its tangy flavor complements the savory filling, while baking powder helps the dough become lighter.

The potato filling is equally straightforward. Boiled potatoes provide a creamy base, fried onions add sweetness, and fresh dill brings a bright, herbal flavor. Together, these ingredients create a comforting filling that works beautifully inside golden fried dough.

You also don’t need yeast or a long rising period, making this recipe convenient when you want homemade pastries without waiting hours for dough to rise.

    Ingredients You’ll Need

    For the dough

    • 1 cup (250 ml) plain kefir
    • 1 teaspoon salt
    • 1 tablespoon granulated sugar
    • 1 large egg
    • Approximately 3⅓ cups (400 g) all-purpose flour
    • 1 teaspoon baking powder

    The potato filling

    • 14 oz (400 g) boiled potatoes, peeled
    • 1 medium onion, finely chopped and fried
    • 1.4 oz (40 g) fresh dill, chopped
    • Salt and black pepper, to taste

For frying: Vegetable oil, as needed.

How to Make Kefir Potato Puffs

    Kefir Potato Puffs

Golden fried pastries with mashed potato, onion, and dill filling.

    Prep time: 30 minutes

    Cook time: 20–30 minutes

    Total time: 50–60 minutes

    Yield: About 10–12 pastries

    1. Prepare the potato filling

Boil the potatoes in salted water until they are completely tender. Drain them well and mash until smooth. Avoid adding too much liquid because a firm filling is easier to wrap inside the dough.

Meanwhile, finely chop the onion and fry it in a little oil until soft and golden. Mix the onion into the mashed potatoes, then add the chopped dill, salt, and black pepper. Taste and adjust the seasoning. Allow the filling to cool.

    2. Mix the kefir dough

In a large mixing bowl, whisk together the kefir, egg, sugar, and salt. Add the baking powder and gradually mix in the flour.

Stir until a dough forms, then knead gently until it becomes soft and reasonably smooth. Add flour sparingly if the dough is sticky; too much flour can make the finished pastries dense.

Cover the dough and let it rest for approximately 10–15 minutes. This short rest makes it easier to roll and shape.

    3. Fill and shape the pastries

Divide the dough into equal portions and roll each portion into a small circle on a lightly floured surface.

Place a spoonful of potato filling in the center. Bring the edges together and pinch them firmly to seal the filling inside. Flatten each parcel gently into a small pillow or oval, keeping the filling enclosed.

Avoid overfilling the dough, as this can cause the pastries to split during frying.

    4. Fry until golden

Heat vegetable oil in a deep, heavy pan over medium heat. Carefully add a few pastries at a time, leaving enough space for them to expand.

Fry, turning as needed, until the dough is golden brown and cooked through. The exact cooking time depends on the thickness of the dough and the temperature of the oil.

Maintain a steady medium heat. Oil that is too hot can brown the outside before the dough cooks inside, while oil that is too cool can leave the pastries greasy. Transfer the cooked pastries to a paper towel-lined plate.

    5. Serve warm

Serve the potato puffs warm, when the outside is crisp and the filling is soft. They pair well with plain yogurt, a garlic-yogurt dip, or a simple cucumber salad.

    Tips for the Best Results

Use a firm filling. Drain the potatoes thoroughly and allow the filling to cool before shaping the pastries.

Measure flour carefully. The original recipe calls for 400 grams of flour. Depending on the kefir and flour, you may need a small adjustment, but adding too much can make the dough tough.

Seal every edge. Pinch the seams securely and place them facing down when frying.

Control the oil temperature. Fry in small batches and avoid overcrowding the pan.

Try a lighter cooking method. You can experiment with baking the pastries on a lined tray brushed with oil, although the texture will differ from the fried version shown in the photograph.

    Storage and Reheating

Refrigerate leftover pastries in a covered container within two hours of cooking. For best quality, eat them within three to four days and reheat until steaming hot throughout.

Reheat in an oven or air fryer to help restore the crisp exterior. A microwave works for convenience but usually makes the dough softer.

You can also prepare the potato filling ahead of time and refrigerate it until you’re ready to shape the pastries.

    Final Thoughts

Kefir potato puffs are a comforting homemade treat made from everyday ingredients. The combination of tender dough, mashed potatoes, fried onions, and fresh dill creates a savory pastry suitable for breakfast, snacks, or a casual family meal. Follow the shaping and frying tips for a golden exterior and a flavorful, soft center.
