Cabbage becomes surprisingly delicious when shredded, seasoned, and cooked until golden brown. Add tender chicken, carrots, garlic, and Italian herbs, and you have a satisfying meal that is crisp on the outside and juicy in the middle.

These easy cabbage and chicken fritters are a practical way to turn affordable ingredients into a homemade dinner. Eggs and a little flour help hold everything together, while a refreshing cucumber-dill sauce adds a creamy finish. For an extra cheesy version, sprinkle a little shredded cheese over the fritters and cover the pan briefly until it melts.

Whether served for lunch or dinner, these savory vegetable pancakes are simple enough for a weeknight and delicious enough to share at the family table.

Why You’ll Love These Cabbage Fritters

Cabbage provides texture and a mild, naturally sweet flavor. Chicken breast makes the fritters more substantial, while carrots and onions add color and sweetness. Garlic, black pepper, and Italian herbs give the mixture a savory aroma without requiring an elaborate spice collection.

The recipe is also adaptable. Use Greek yogurt for a tangier, protein-rich sauce or sour cream for a richer taste. You can adjust the seasoning, add a little cheese, or make smaller fritters for an appetizer.

Ingredients for Cabbage and Chicken Pancakes

    For the fritters

    • 1 medium head of cabbage
    • 2 chicken breast fillets
    • 3 eggs
    • 4 tablespoons all-purpose flour
    • 1 onion
    • 1 carrot
    • 2 garlic cloves
    • 1 teaspoon Italian seasoning
    • Salt and black pepper, to taste
    • 2 tablespoons vegetable oil, plus a little more if needed
    • Optional: shredded cheese for topping

    For the creamy cucumber-dill sauce

    • 250 g Greek yogurt or sour cream
    • 1 cucumber
    • 1 small bunch of fresh dill
    • 1 garlic clove
    • Salt and black pepper, to taste

How to Make Crispy Cabbage and Chicken Fritters

    1. Prepare the vegetables

Remove any damaged outer cabbage leaves and finely shred the cabbage. Grate the carrot, finely chop the onion, and mince the garlic.

If the cabbage is particularly firm, massage it briefly with a small pinch of salt to soften it. Drain any excess liquid before mixing the ingredients. This helps the fritters hold their shape during cooking.

    2. Cut the chicken

Cut the chicken breast into very small pieces so it distributes evenly throughout the cabbage mixture. Alternatively, pulse the chicken briefly in a food processor without turning it into a completely smooth paste.

Keep raw chicken separate from ready-to-eat ingredients, and wash your hands and utensils after handling it.

    3. Mix the fritter batter

In a large bowl, combine the cabbage, chicken, carrot, onion, garlic, eggs, flour, and Italian seasoning. Add salt and black pepper, then mix thoroughly.

The mixture should be moist enough to hold together when pressed with a spoon. If the cabbage releases a lot of water, drain the excess liquid before adding more flour. Too much flour can make the fritters dense rather than tender.

    4. Fry until golden and cooked through

Heat the vegetable oil in a large nonstick skillet over medium heat. Spoon small portions of the mixture into the pan and flatten them gently into pancakes.

Cook for several minutes on each side until the outside is golden brown. Because the fritters contain raw chicken, do not rely on color alone. Check the center of a thick fritter with a food thermometer; chicken must reach an internal temperature of 165°F (74°C).

If the outside browns before the chicken cooks through, lower the heat and cover the pan briefly to help the center cook. Avoid overcrowding the skillet, as this can cause the fritters to steam instead of brown.

    5. Add cheese if desired

For a cheesy finish, sprinkle a little shredded cheese over the cooked fritters while they remain in the pan. Cover with a lid for about 30–60 seconds, just until the cheese melts. Keep the heat low to prevent the bottoms from burning.

Transfer the finished fritters to a serving plate. Their golden surfaces and tender centers make them especially appealing when served warm.

    6. Make the cucumber-dill sauce

Grate the cucumber and squeeze out excess moisture. Mix it with Greek yogurt or sour cream, finely chopped dill, minced garlic, salt, and black pepper.

Taste and adjust the seasoning. Refrigerate the sauce until serving so the flavors can develop. Serve it alongside the hot fritters or spoon a little over each portion.

    Estimated Nutrition Information

For planning purposes, one serving is approximately one-sixth of the recipe, including the yogurt-based sauce. Depending on the amount of oil absorbed, chicken size, and choice of dairy, each serving may provide approximately:

    • Calories: 280–380
    • Protein: 25–32 g
    • Carbohydrates: 18–28 g
    • Total fat: 10–18 g
    • Saturated fat: 2–5 g
    • Fiber: 4–7 g
    • Sodium: 350–650 mg

These are estimates, not laboratory-tested values. Sour cream, extra cheese, and additional frying oil can increase the calories and fat. Calculate the finished recipe using the actual ingredient weights for more accurate nutrition information.

    Tips for Tender, Golden Fritters

Keep the cabbage mixture manageable. Excess moisture makes the batter loose and prevents proper browning.

Make evenly sized pancakes. Smaller fritters cook more consistently and are easier to flip.

Use moderate heat. High heat can burn the exterior while leaving raw chicken inside.

Serve the sauce separately. This keeps the fritters crisp and allows everyone to add as much sauce as desired.

What to Serve With Cabbage and Chicken Fritters

These fritters pair well with a fresh tomato salad, steamed vegetables, or a simple cucumber salad. For a more substantial dinner, serve them with roasted potatoes or warm whole-grain bread.

Refrigerate leftovers within two hours of cooking in a covered container. Use them within three to four days and reheat to 165°F (74°C). Keep the yogurt or sour cream sauce refrigerated separately.

    An Easy Dinner Worth Saving

Crispy cabbage and chicken fritters bring together everyday ingredients, a golden crust, and a fresh garlic-dill sauce. Add melted cheese for extra richness or keep the original version simple. Either way, this flexible recipe offers a delicious alternative to ordinary chicken dinners and makes good use of an often-overlooked vegetable.
