    • 120–150 g grilled chicken breast
    • ¾ cup cooked quinoa
    • ½ cup cucumber
    • ½ cup chopped tomatoes
    • 1 cup lettuce or mixed greens
    • ¼ avocado
    • 2 tablespoons plain yogurt
    • Lemon juice
    • Black pepper
    • Fresh herbs
    • Optional garlic

    Preparing the bowl

    Season the chicken with black pepper, herbs, garlic and a little lemon juice. Grill or pan-cook until fully cooked, then allow it to rest before slicing.

    Prepare the quinoa according to the package directions and let it cool slightly. Meanwhile, chop the vegetables into bite-sized pieces.

    For the dressing, combine plain yogurt with lemon juice, herbs and black pepper. A splash of water can loosen the consistency if necessary.

    Build the bowl with greens first, followed by quinoa, chicken, vegetables and avocado. Finish with the yogurt dressing.

    The result should look colorful rather than monotonous. Good food should be appealing before the first bite.

    The nutritional advantage of quinoa

    Quinoa is technically a seed rather than a conventional cereal grain, although it is commonly prepared and eaten like a grain. It provides carbohydrate and dietary fiber while also contributing protein.
